Devil's Food Cake

5 oz. ( 5 sq.) unsweetened chocolate 3 1/3 cups flour
1 1/2 tsp. baking soda 1 1/2 tsp. baking powder
1 1/2 tsp. salt 6 oz butter, room temperature
2 1/2  cups sugar 4 eggs
1 1/2 tsp. vanilla 2 cups water

Heat oven to 250º. Grease & flour three 9 inch round baking pans.
Chop the chocolate and place in small pan.
Melt in the oven, stirring occasionally.
Remove and let cool.
Increase oven temperature to 350º.
Combine flour, baking soda & powder & the salt.
On medium speed, beat butter & sugar until light & fluffy, about 5 minutes.
Beat in the eggs ,one at a time, beating well after each addition, add the vanilla.
Beat in the melted chocolate.
Reduce speed & beat in the flour mixture in thirds, alternating with the water, until just mixed.
Pour into prepared pans.
Bake 30 minutes or until test done.
Cool in pans 10 minutes.
Remove from pans and cool completely on wire racks.
